There is nothing like cooking a full hog in the Yorkshire dales when the weather starts to get a little warmer. Winter time hog roasting can be quite draining specially if its raining. What we love most is the sun. Sunshine is as complimentary to roast pork almost as apple sauce (if eating outside). The whole idea of a hog roast is about cooking outside, bringing family and friends together and sharing good food and drink. And if the weather is below par then it’s a bit like running out of apple sauce – it still tastes good but there is still a feeling of incompleteness. So here is to the coming of spring and all things bright and beautiful. We are booking up fast and we are looking forward to a bright summer.
